Seems to me like you're processing correctly, however, they need about 48 hours in the fridge for rigor mortis to come and then go. If you're cooking them within 24 hours, then you're cooking them in...

It is my opinion that the only really good meat bird is a cornish cross. Dual purpose breeds are good for soup and dumplings. Order some broilers and you will taste the difference.Tim
